Let me tell you a little secret. No one has yet to mistake me for Betty Crocker. You will never see my face pictured on a food item. I would never be chosen to be The Next Food Network Star.
Straight out, I am just not that great a cook. I cook because.. um well, uh, hm. Oh, I got it. I cook because I like to eat, especially when I’m hungry. And to be honest with you, I guess it would probably make my husband happy to get a meal every so often. Such is life.
Not having much left in my freezer but refusing to go grocery shopping, I was able to retrieve some simple things to make a quick and decent meal from things already on hand.
There was a little left-over ground beef I took from the freezer to unthaw.
After it unthawed I cooked it on the stove top and ground it down into chewable taco-size bits.
When that was finished cooking I removed it from the pan. To this same pan, I added a little margarine to melt for flavor.
I reached into my freezer to retrieve some various-colored peppers that I had previously chopped and placed in a freezer bag.
I chopped up a large onion into fine pieces
I took 2 cans of mushrooms from my pantry and drained them.
Once the margarine began sizzling I added the peppers, onions and mushrooms to the pan and let them sauté all together. (Are you smelling it yet)?
While that was cooking, I took 4 medium sized potatoes, washed them and rubbed down with a little margarine. I placed them in the microwave to cook for a few minutes.
When the potatoes were done I used a fork to open them . They were then topped off with the delicious vegetables. I added a little steak sauce to my ground beef after placing it on the potato. My husband opted to use taco sauce on his. It made a rather attractive looking medley with all the colorful vegetables peeking through.
And let me tell you folks. That was some good eating.
I’ve always said if I have a baked potato I won’t ever go hungry. It was quite filling.
I think it would even be a meal that our own AC Contributor, Atlanta Page would approve!!! And that would make me really proud.
