I love food, anything about it: growing, shopping, preparing, cooking or storing. When I travel I love to try local specialties rather than 5 star restaurants. Everybody loves to go to the famous restaurants but sometimes it’s just a rave about the place or the atmosphere. Recently I spend some time in Hawaii, Oahu with my family. We visited bunch of different local spots and I can’t say anything bad for any of them. North Shore’s main food source are food trucks, supermarkets and several restaurants. But this food truck deserves a story because food which Opal prepares is truly wonderful.
Opal truck is offering great quality Thai cuisine. Truck is located at the road side lot at the Kamehameha highway. A lot of people ordering food to go, because there is a limited sitting area and the whole atmosphere is different with near by creek and local vegetation. But this article is not about exterior it’s about food, taste, texture, and absolutely amazing food experience.
Opal truck and his owner Opal are great and very creative team. Very important to mention is that Opal truck is a family operating business. Opal is brilliant chef and let me tell you why. He loves to add different ingredients and spice up your dish because he loves to surprise he’s customers. But before that, he’ll always ask about possible food allergies or restrictions. It is fascinating that he knows all his customers and believe me there are a lot of them-hundreds and he remembers exactly what type of dish he prepared for each customer last time, even the time before. Now that is like a personal chef experience. Important notice: waiting line is long and minimum wait for the meal is around 30 minutes plus the line is always there from opening till closing. Ingredients are locally grown, fresh, crisp and cooked to perfection. Nice variety of vegetables and excellent combinations with protein or vegetarian. All sauces are made daily from scratch. Whatever you choose from the menu you made a great choice but my favorites are: Pad Thai, Drunken Noodle, and Pineapple Fried Rice. Great choice for kids is Sweet and Sour Noodles. Opal is charging his satisfied customers after they finished the meal, how cool is that? Opal Thai is offering catering options too.

If you find yourself in near buy future on the Oahu’s beautiful North Shore try to take a trip to Haleiwa and look for Opal Thai truck. They are located at the Kamehameha Hwy across the street from Mc Donalds. Can’t wait to go back and try new version of my favorite dish.
