Here is the best one egg recipe ever! It was handed down to me by my mother who was given it by her mother. This is truly an Old World southern Italian breakfast.
Here’s what you need:
one slice bread
butter or margarine
salt and pepper
OK, this is really easy. Make a hole in the bread about 2 inches wide. Heat up a skillet, greasing generously with butter or margarine. Place the bread into the skillet. Crack open the egg, dropping it into the hole in the bread. Wait for bread to brown slightly and egg to set. Flip over with a spatula. Brown on the other side. Season to taste with salt and pepper.
You can use either a little or a lot of butter/margarine according to your preference. The tastiest ones use lots of it!
