I am known for my muffin baskets. I make them for special holidays like Thanksgiving and Christmas.
While I usually like to make my muffins from scratch, I have been known to cut a few corners from time to time when it is necessary. However, I have one hard fast rule. No muffin goes into one of my baskets unless it is first-class in taste.
When it comes to using pre-packaged muffin mixes, I usually find that Martha White holds the best answers. However, when it comes to banana nut muffin pre-mixes, Betty Crocker can’t be beat.
Betty Crocker’s Banana Nut Muffins are easy to make and they always come out moist and tasty. Maybe that is because they are made with real bananas.
These muffins also save on time. It takes less than five minutes to get them from package to oven.
All you need to bring to the equation is 1.5 cup of water. Blend it in with the muffin mix and pour the batter into muffin tins. Bake at 400 degrees Fahrenheit for between 15 and 20 minutes or until the muffin tops are a delicious golden brown.
Remove the muffins from the tins once they have cooled and serve them alone or with butter, whipped cream or ice cream. If you aren’t going to use them right away, wrap the muffins in plastic wrap or cellophane or put into zipper bags to keep them fresh.
You can store them in the freezer for up to three months. They will also keep in the fridge for approximately one week. Stored at room temperature, they should be consumed within three or four days.
To reheat Betty Crocker’s Banana Nut Muffins, pop them in the microwave for about 15 to 30 seconds. It will take more time for muffins that are frozen.
There are six servings of muffins in each Betty Crocker Banana Nut Muffin mix. There are 130 calories per serving. Of that amount, about 35 calories are fat-related.
