1 ½ cup flour
2 packets of low calorie sweetener (I use Splenda)
1 teaspoon baking powder
½ teaspoon baking soda
1 ½ cups buttermilk
1 teaspoon vanilla extract
In a medium size bowl mix the flour,Splenda, baking powder, and baking soda.
In another bowl, wisk the eggs, buttermilk, and vanilla together.
Pour the liquid ingredients into the flour mixture and stir until it is combined together.
Spray a nonstick griddle with cooking spray over medium heat. I like to make mine silver dollar pancakes. Cook the pancake until it is bubbly and dry on the edges, (usually 3 to 4 minutes). Turn the pancake over and cook for 2-3 minutes longer.
I use light or sugar free syrup for mine because I am diabetic. You can also use ¾ cups regular flour and ¾ cup whole wheat flour to make this even healthier.
