This smoothie tastes incredible. This is really a great and healthy breakfast to go. Forget fast food and sinful breakfasts. This only takes about five minutes to make when you have pre-frozen your own fresh cantaloupe chunks into cantaloupe freezer packs.
Prepare the pineapple ahead as well. Peel and cut into chunks and store in the refrigerator for at least five days. You can also freeze these as well. You can buy pineapple frozen in some supermarket freezer sections. Never use canned or jarred pineapple-it has been cooked to preserve it and all the nutrients have been cooked out and the end result is nothing but a pure sugar cube.
And here you go:
(1) zip lock pack of frozen cantaloupe
8 ounces of light vanilla soy milk (I use Silk or 8th Continent)
(10) 1 – 1 1/2 inch chunks of FRESH pineapple
Set out the cantaloupe for about ten minutes before blending to slightly thaw. (Hint: I have nuked in the microwave for about 15 – 20 seconds to thaw a little when I am in a rush, but I try not to do that.) Pour soy milk into blender or small blender. Add frozen cantaloupe chunks. Pulse until blended. Add fresh pineapple chunks to the blender and pulse again until all is blended. Pour into a plastic go cup and go! Cantaloupe is loaded with potassium and is so good for you. It is also very low-cal and low-carb. This whole drink has less than 150 or so calories. That is really a dietary improvement over the quickie frozen then microwaved sausage biscuit and certainly better than a burger chain’s breakfast sandwich.
It will take less time to prepare this than sitting in that drive through line. And since it is a drink, you will not have to buy that soda or cup of coffee. And it is cheaper! It is nonsense when people say they can eat cheaper from a fast food restaurant! And you will not be tempted to add on a muffin, or some of those little greasy hash brown nuggets, with absolutely no health value.
Another possibility for the morning would be a Cantaloupe Slush Smoothie using fresh orange juice and these same cantaloupe freezer packs.
Blender clean-up tip: Place a small amount of water in the blender with a tiny drop of liquid dish detergent. Attach lid and pulse a couple of times. This will clean it. Rinse thoroughly and let air dry, without the lid on. This will eliminate any odors and will keep the container from ‘sweating.’
