Chicken Celery Chow Mein
3 lg. skinless, boneless chicken breasts cut into cubes
1 lg. onion cleaned and diced
1 stalk celery washed and chopped into 1 inch pieces
1 pint mushrooms cleaned and cut in half
1 14 oz. can bean sprouts rinsed and drained
1 10 oz. can chicken broth
3 Tbsp. Olive oil
3 Tbsp. butter
Soy sauce to taste
Heat olive oil and butter in a skillet over medium – high heat, add onion and sauté until it is transparent.
Add celery and sauté for about 5 minutes, add mushrooms and bean sprouts. Continue to stir and sauté for additional 10 minutes, add chicken sauté until brown. Finally add chicken broth and soy sauce, cover to simmer for 30 minutes or until chicken has cooked thoroughly.
Serve over rice, Chinese noodles, or spaghetti.
Accompany this meal with egg rolls and pickled ginger.
