This original recipe yields extremely tasty cookies which are sure to be a hit during the holidays, at cookie exchanges, at office parties, as gifts, and as a yummy snack!
1 large banana, peeled and mashed
1/2 cup creamy peanut butter
2 large eggs
3/4 cup granulated sugar
3/4 cup brown sugar
2 1/4 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 large package (10-12 ounces) semi-sweet chocolate chips
Pre-heat oven to 350 degrees F. Cream the banana, peanut butter, eggs, and sugars. Sift flour, baking powder, and salt together; add to creamed mixture and beat or stir by hand until incorporated. Stir in chocolate chips by hand. Drop by spoonful onto ungreased cookie sheet (or aluminum foil-lined cookie sheet for fast and easy clean-up). Bake for 10-12 minutes at 350 degrees F, until “peaks” of cookies start to turn a light golden-brown. Be careful to not over-cook or burn the cookies. Yields 3 1/2 dozen delicious cookies (42 cookies).
To freeze, separate layers of cookies with wax paper and store in a freezer-safe container or freezer bag.
Enjoy these scrumptious cookies with a cup of coffee, tea, ovaltine, or hot chocolate, or with a nice tall glass of ice cold milk.
