Shredded carrot- 2 cups
Sugar- 1/2 cup
Milk- 1/2 cup
Cardamom powder- 1/4 tsp
Cashew nuts, almonds, pistachios- 1/4 cup
Ghee/clarified butter- 2tbsp
Roast the nuts in ghee and keep aside.
Take a saucepan and add a little ghee, to this add the grated carrot and roast until the raw smell of carrot goes away.
Then add milk and sugar and cook until the carrots start to come together in one mass, stirring frequently.
Then add the roasted nuts and ghee. Let it simmer for some more time.
Take off from the heat and serve warm.
For extra richness heavy cream can be substituted for part or all of the milk.
Dried whole milk can also be added along with milk; about half a cup can be used.
You can serve with a dollop of vanilla ice-cream.
