Several years ago I was given a handy cookbook that is put out by a sorority of sisters from the Beta Sigma Phi chapter. This Fast Feasts cookbook is made by Favorite Recipe Press. I have used it several times and have modified a couple of unique recipes to fit my needs. This recipe is under the breads category and it is a Low Fat Pumpkin Bread.
Low-Fat Cranberry Pumpkin Bread
3 ½ cups all-purpose flour
1 cup packed light brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
¾ teaspoon salt
1 teaspoon cinnamon
½ teaspoon ground cloves
1 cup egg substitute( I use 2 ounces of applesauce)
1 (16-ounce) can whole cranberry sauce
1(15)-ounce) can pumpkin
1/3 cup vegetable oil
1 tablespoon grated orange rind
2 tablespoons chopped nuts.
Preheat the oven to 350*. Combine the flour, brown sugar, baking soda, baking powder, salt, cinnamon and cloves in a large mixing bowl and mix well.
Blend the egg substitute( according to about.com you can smash up, or blend half a banana, or ¼ cup of applesauce to use as an egg replacer in baked goods such as muffins, pancakes, or any yeast-free quick breads, such as pumpkin bread), cranberry sauce, pumpkin and oil in a medium bowl. Add the flour mixture and mix just until moistened, it will be very thick. Stir in the orange rind. Pour into 2 greased loaf pans and sprinkle with the nuts. Bake for 55 minutes. I like to use my convection oven so that the bread gets evenly cooked, and I only have to cook it for 45 minutes. Let stand on a cooling rack, enjoy warm with Smart Balance butter spread on top or just plain.

Pumpkin Spice Latte
To compliment this tasty Bread is my favorite coffee drink. The Pumpkin Spice Latte:
1 or 2 shots espresso in steamed milk; whole, 2%, non-fat, or soy ( my choice), with 3 pumps of sugar free Italian pumpkin syrup for a Tall cup. Using sugar free syrup offers 5grams fewer sugar content and 20 fewer calories. A small amount of whip cream and a dash of pumpkin spice on the top will make this a delicious treat. Starbucks makes the best Latte’s. A treat to splurge on with a good friend once in awhile.
