Scrambled eggs are certainly a breakfast favorite. There is nothing more comforting in the early morning hours than a nice plate on your table with some fluffy scrambled eggs, a side of your favorite breakfast meat and a toast or bagel. Making great scrambled eggs is easy. And if you spiff up your scrambled eggs, they also make a tasty side dish for any meal!
If you want extra fluffy scrambled eggs, one trick is to add water to the beaten eggs. Some people add milk, but the milk will make your eggs watery and the water won’t. Add about one teaspoon of water for each egg you beat. You can also add 1/4 teaspoon of baking powder (baking powder, not baking soda) per two eggs.

Beat your eggs with a fork, or if you are beating a lot of eggs, you can use an electric hand mixer. Then get a frying pan hot and add a piece of butter to the pan. Just as the butter melts, pour in your beaten eggs and immediately start to scrape the bottom of the pan with a spatula to turn the eggs over. Turn the heat down to medium and continue to turn the eggs over until they are cooked. You can leave the eggs in big pieces if you like chunky scrambled eggs, or you can scramble them until they are in small pieces.
If you want to spiff up your scrambled eggs, you can add just about anything you want to them, sort of like making an omelet, but a scrambled omelet. Just use ingredients that are already cooked. Heat the ingredients first in the frying pan, then when they are hot, add the eggs and scramble the whole lot. You can add things like broccoli, mushrooms, onions, garlic, chopped tomatoes, or whatever you like. You can even add cheese to your scrambled eggs. Just before your eggs are fully cooked, spread them out and add cheese on top. Then cover with a lid and let the cheese melt as the eggs finish cooking.

One ingredient that is good to add to scrambled eggs is cooked rice. Mix in as much rice as you want. Add some cooked vegetables to the rice and eggs and you have a terrific side dish to serve with any meat or fish.
You can also cook scrambled eggs in the microwave. Just scramble the eggs in a glass, microwave safe bowl, cook on high for 20 seconds and stir. Then cook for 20 more seconds and stir. Do this until the eggs are cooked. It usually takes about 1 to 2 minutes, depending on how many eggs you cook at a time.
