We are in the midst of pear season, and while they are delicious on their own, baked pears make a simple, healthy dessert. They present well and go great with ice cream.
I like to serve baked pears after Thanksgiving or Christmas dinner because they can cook while you are eating or watching football.
2 ripe pears, washed
2 tbsp honey (or agave syrup or simple syrup)
1/4-1/2 cup of shelled walnuts
2 cinnamon sticks
Vanilla or cinnamon ice cream, optional
Vegetable peeler or small paring knife
Glass baking dish
1. Preheat the oven to 350.
2. Mix the walnuts with the honey in the small bowl.
3. Carefully cut out the core of the pear.
You want a hole about 1 inch in diameter going lengthwise through the pear.
An easy way to do this is to slide the vegetable peeler in around the stem and work down around the core, then slide the peeler in around bottom and finish cutting around the core. Now push the bottom up through the top.
4. Stuff each pear with a cinnamon stick and part of the walnut mixture. Jam a large walnut into the bottom of the pear to hold everything in.
5. Place pears in upright baking dish and scatter remaining walnut mixture in the dish.
6. Add about a 1/4 inch layer of water to the dish, and bake for 30-45 minutes until the pears are soft.
7. Check the water level half way through the cooking time and replenish if necessary.
8. After cooking, serve in a bowl alone or with vanilla or cinnamon ice cream.
9. Sprinkle remaining nuts from the pan on top.
