1 graham cracker pie crust
1 8oz package softened cream cheese
1/2 cup sugar
1 tsp lemon juice
1/2 tsp vanilla
optional: 1 can fruit pie filling of your choice
Preheat oven to 325 degrees.
Beat cream cheese until fluffy. Blend in sugar, lemon juice, vanilla, and salt and continue to beat until incorporated.
Beat in eggs, one at a time, until incorporated.
Pour into pie crust, smooth out with a spatula so that the cheesecake is level.
Bake at 325 degrees for 25-30 minutes or until the filling is set. You can tell this by touching the center and there is no “jiggle” to the filling.
Remove from oven and allow to cool one hour before putting in the fridge.
when ready to serve, if you choose, open a can of fruit pie filling and pour over the top of the baked cheesecake. Keep refrigerated until ready to serve.
