Potato soup is delicious any time. Serve with a sandwich or enjoy a bowl with crackers. Keep a few key ingredients on hand to make this potato soup.
To make easy potato soup, you’ll need:
1/2 medium onion
2 tablespoons butter
2 slices ham
2 large or 3 medium potatoes
2 teaspoons of corn starch
2 cups milk
1/2 cup shredded cheese
salt and pepper
Prepare to Cook
Dice the onion. Chop the potatoes and carrots into small bite-sized pieces. Cut the ham into cubes or small bite-sized pieces. Shred the cheese.
Saute the Onions and Ham
Put the butter in a sauce pan on the stove on medium heat. Add the onions and ham. Saute them until they begin to turn brown. Stir often.
Cook the Soup
Add the potatoes and carrots to the pan. Pour water over all and place the lid on the pan. Bring the water to a boil and remove the lid as needed. Cook the soup until the potatoes and carrots are tender, about 20 to 30 minutes. Stir several times.
Finish the Soup
There won’t be much water left, so leave it in the pan to retain vitamins and minerals. Scoop about 1/2 cup of broth from the pan and place in a small bowl. Add the cornstarch and stir until all lumps are gone. Add this mixture to the soup to thicken the soup. Add the milk and stir.
Turn the heat down to let the soup simmer for about 10 minutes. Add your choice of cheese. Add salt and pepper to taste. Stir in the cheese and serve.
