Now that i am a stay at home dad, i have found myself in the kitchen more than ever! I like to experiment, try new things and make new dishes for my family to eat! I have to be really careful as my children have severe food allergies, especially to egg, peanuts, avacardo and garden peas all of which can be life threatening to them. BBQ chicken is incredibly easy to make, it tastes delicious and is allergy free for my kids! This will be ready to eat in about 40 mins!
BBQ sauce is important, pick a brand that you like. We will be making some modifications to it to make it even better than it is out of the bottle. This What you will need to make the BBQ Sauce:
1 bottle of your favorite BBQ sauce
1/2 cup of your favorite zesty Italian dressing
1/4 brown sugar
Salt and Pepper to taste
Combine the above ingredients into a bowl and mix them together well. You can add other ingredients if you like. I have tried hot sauce and worcestershire sauce as well and it makes it equally yummy! The Italian dressing is amazing in this! It adds a super zest which is amazing on the BBQ Chicken.
Preparing your chicken is easy. I always will use 4 large chicken breasts to feed my family of 4 and have enough left over for lunch the following day. I use probably the most simple method of cooking chicken which is poaching. Put water in a pan, enough to cover the chicken breasts. get it hot enough so that there are bubbles on the bottom of the pan but not hot enough so that the water is at a full boil. Season your water with pepper and salt, the chicken will soak up that flavor. Place the chicken breasts in the water and let them cook for 20 to 25 minutes. To ensure that they are done, pull out one chicken breast and cut it at the thickest part. If there is no pink then the breast is done. Do this on all the breasts just to make sure.
Now you are ready to pull the chicken. This is super easy! You can pull apart by hand or by using the two fork method. I use the two fork method. Hold the chicken with one fork while pulling away from it with the other fork. The chicken will shred easily. Once done, place the BBQ sauce into a pan and heat it up on medium heat, once it is warm start putting the chicken in a little at a time, ensuring that you stir the chicken into the sauce so that it gets a good coating. Once all is covered the BBQ chicken is ready to eat. Place in your favorite rolls (i love Kaiser) or on top of a baked potato and you will have the best Pulled BBQ Chicken Sandwich ever!
