A cool cross between Rocky Road ice cream and Smore’s, these cookies are simple to make and even easier to eat. One batch may not be enough!
Easy Rocky Road Cookie Squares
You will need:
6 Tbsp. butter
1 ½ cups graham cracker crumbs (you don’t have to buy these, you can just crush crackers you already have)
2 Tbsp. sugar
1 cup chopped almonds
2 cups mini marshmallows
1 cup semisweet chocolate chips (you can use dark chocolate, if you prefer)
Step 1. Preheat the oven to 350 degrees.
Step 2. Melt the butter in a medium bowl in your microwave.
Step 3. Add the crumbs and sugar to the butter and mix well.
Step 4. Press the crumb mixture into the bottom of an 8 x 8 pan lined with foil or waxed paper.
Step 5. Sprinkle the almonds over the crust and bake for 10 minutes.
Step 6. Remove the pan from the oven and sprinkle the marshmallows and chocolate chips on top.
Step 7. Bake for another 10 minutes, or until the marshmallow is nice and gooey.
Step 8. Cool completely. Remove the bars from the pan and cut into squares.
You can keep these bars in an airtight container for up to 4 days. Enjoy!
