In 2002, Kathy Wiley began Poco Dolce, a bakery specializing in Italian breads. A year goes by and she discovers her new found passion of gourmet chocolate making. Poco Dolce’s Tiles were born and chocolate would never be looked at the same again.
Poco Dolce translates into “not too sweet” in Italian. This is the motto which is tasted in their chocolate creations. Some delights feature Grey sea salt, harvested from the coast of Brittany, while others contain toasted pumpkin seed, cinnamon, crystallized ginger or treats made with chile. Only the finest all-natural ingredients are used and the products are all created in small batches.This style of chocolate making is closer to the ancient Aztec chocolate than any other style. Originally, chocolate was drank and it had ingredients such as crushed chile and paprika. Chocolate was a spicy treat, not sweet.
