Famous Cincinnati Chili Recipe
This is one of many iteratrions of the world famous Cincinnati chili recipe. Many have tried to replicate the recipes of the very popular chili parlors in Cincinnati, but there really is no substitute for the real thing. This recipe is a very good match for the original Cincinnati chili.
1 1/2 pounds lean ground sirloin
1 medium white onion, chopped
1 (20 ounce) can tomato sauce
1 (14 ounce) can diced tomatoes
1/2 teaspoon cinnamon
1/2 teaspon unsweetened cocoa
1/2 teaspoon allspice
1 teaspoon salt
1/2 teaspoon pepper
1 1/2 tablespoons chili powder
1/2 teaspoon ground cumin
1 tablespoon cider vinegar
1 tablespoon minced garlic
1 teaspoon Worcestershire sauce
3 bay leaves
Brown ground sirloin and chopped onions. Drain grease. Place meat and onions in a large pan or crockpot with all other ingredients. Cook slowly for 4 to 5 hours, covered, stirring a few times. Add water in small increments if you prefer a thinner chili.
Remove bay leaves before serving.
Serve by itself in a bowl, on a hot dog topped with mustard, onion and cheese for a cheese coney, or on top of spaghetti with cheese, onions and beans (or any combination). Serve with hot sauce and oyster crackers.
