When I entertain I always want to put something healthy out for guests like a veggie platter or a fruit salad to balance out the rest of the meal. For occasions when things need to be a little bit fancier I like to dress up my fruit salads or “fancy” them up a bit by adding a little sauce or dressing to them. My recipe for Fancy Grape Salad is a nice thing to serve at baby and bridal showers as well as for more elegant picnics or BBQ’s.
Here is my recipe for Fancy Grape Salad
2 cups cubed canteloupe
1 1/2 cups green (seedless) cut in half length wise
1 1/2 cup red grapes (seedless) cut in half length wise
1 11 ounce can mandarin oranges
1 can of canned pinapple chunk pinapple – reserve the juice in another bowl
1/2 cup orange marmalade
1 tablespoon of fresh mint diced
In a large bowl suitable for serving add the centeloupe, grapes, pineapple, and mandarin and oranges and give them a gentle tossing to mix them all together.
In another bowl add the pineapple juice and the marmalade and whisk them together, until they are incorporated in to one another and they become like a thick sauce. Be sure to whisk and not stir.
Pour the sauce over the fruit and toss gently to coat the fruit.
Just before serving garnish the top of the bowl with the fresh mint. An option for this would be to top it with ground coconut or place a bowl of coconut to the side and allow guests to use it they would like to. You could also add chopped walnuts if you like or put them on the side as well for guests to put them on if they like. Since not everyone likes walnuts and coconut I don’t put them in there, but they are really good with this if you like them.
