While mashed potatoes are great, nothing is better then adding some fresh garlic to the mix. Tasty and filling as a stand alone snack or a side dish this recipe is simple, healthy, and appetizing.
2 Large Potatoes, or 4 Small Potatoes peeled and quartered.
2 Cups Skim Milk
2 Large Cloves Garlic, chopped
Salt and Pepper to taste
Start with a small saucepan over low heat with the milk and garlic. Cook until garlic is soft, about 30 minutes.
Cook the potatoes, covered, in a large pot of boiling water for about 20-25 minutes or until tender enough to separate with a fork. Remove from heat, drain, and recover.
Add milk and garlic mixture to potatoes then add salt and pepper to taste. Beat with an electric mixer on low speed or mash with a fork or potato masher until smooth.
Four servings can be made with this each serving being about 153 calories with everything including the skim milk and garlic. If you use butter or any other toppings you’ll have to of course include those into calorie count.
