2 pieces of cod fillets cut in small pieces (you can use any other fish)
1 pound of shrimp, peeled and deveined
½ a pound of yucca (cassava) cut in pieces
½ cup of rice
¼ pound of carrots and peas. Cut the carrots in little squares
Salt and pepper to taste
One onion cut in squares
One small tomato cut in pieces
Two cloves of crushed garlic
Two spoons of lemon juice
1 ½ spoons of cornstarch dissolved in cold water
One gallon of water
Two spoons of virgin olive oil or any other oil
One spoon of seasoning for seafood
In a pan big enough to hold the amount of water, heat the olive oil and sauté the garlic, onions and tomatoes for about two minutes, add the water and rice, salt, pepper and the seafood seasoning and bring to a boil. Once the water is boiling, add the rice, carrots, peas, and yucca (cassava). Let it boil until the yucca and the rice are tender. Add the fish, shrimp, and the cornstarch. Let it boil for another two or three minutes, add the lemon juice and cilantro and you are ready to enjoy that healthy soup.
Makes four servings.
