Canned pumpkin is a food item that’s rarely considered except at Thanksgiving, however, it’s one of those low-cost, good-for-you-foods that is versatile enough for use every week of the year. Warm Pumpkin Soup
Nothing warms you up on a cold winter day like a bowl of thick, rich, homemade soup. Canned pumpkin and a few other ingredients can have you enjoying warm pumpkin soup in a snap.
Chop and sauté one small onion in a two quart sauce pan. Add four cups of chicken broth to the sautéed onion and a 28 ounce can of pumpkin. Bring mixture to boil, then remove from heat and stir in three ounces of goat cheese, a pinch of nutmeg, salt and pepper to taste.
Reduce Fat in Quick Bread Recipes
Canned pumpkin contains almost zero fat, and it’s smooth consistency lends itself perfectly to quick bread recipes. Replace one half of the fat in your favorite quick bread recipe with canned pumpkin. The canned pumpkin will reduce the fat content and increase the nutrient value of the quick bread recipe.
Just like with the quick bread recipes, canned pumpkin can be used in place of a portion of the fat required in cake recipes. Canned pumpkin can also be used as a flavorful addition to any cake recipe. Try swirling canned pumpkin into cake batter or cheesecake batter after it’s in the baking pan for a flavorful twist on a standard cake recipe.
Ice Cream and Cookies
You don’t have to start from scratch to make pumpkin ice cream, use a carton of store bought ice cream and a can of pumpkin to make pumpkin ice cream. Soften your favorite brand and flavor (try vanilla) ice cream, then mix canned pumpkin into the softened ice cream and re-freeze.
Add flavor and aroma to a basic homemade cookie recipe by using canned pumpkin as the cookie flavoring. Add a dash of nutmeg and a pinch of cinnamon to the basic cookie recipe also and the aroma will fill the house.
Use as a Thickening Agent
Add flavor, fiber, nutrients without adding fat to any broth based soup or stew by using canned pumpkin as a thickening agent. When texture and creaminess without the fat is desired in a recipe, give canned pumpkin a try.
