Brooklyn Heights Blog wrote about the imminent opening of Fresh Café Bar back in July, but it apparently took two more months to get everything in order.
Now that they are open however, and making some amazing Crepes apparently, they are starting to get some attention.
Most recently the Brooklyn Daily Eagle wrote about them and especially about the owner, 23 year old Moscow native Maria Dobrovolskiy who just got her US citizenship 2 weeks ago (Congratulations Maria!).
Maria opened up shop in the lobby of the Clark Street subway station, reports the Eagle, and already has a staff of four. She has begun to recognize repeat customers who seem to be quite happy with the very reasonably priced crepes ($4-$6).
Maria also described a commitment to high quality organic ingredients, free range eggs, and fresh fruit. Apparently these things are also quite healthy, since no oil is used in making them.
