My family’s favorite fried rice recipe is called Special Rice where leftover meat and vegetables are pan fried in a white rice concoction.
Special Rice Ingredients:
¼ can of Spam, cut in cubes
½ cup of cooked beef
½ cup of green beans, French cut
½ cup of zucchini cut in julienne strips
¼ cup of carrot cut in julienne strips
2 cups of cooked white jasmine rice
2 tbsp of olive oil
1/8 of cup of soy sauce
Pam, spray oil
Salt and pepper to taste
A pinch of onion powder, garlic powder, and ginger powder
Special Rice Directions:
Heat olive oil in a small skillet over medium heat. Next add each vegetable in skillet. Add salt, pepper and the other spices along with tablespoon of soy sauce to the vegetables. Cover the skillet for 4 minutes or until the vegetables are tender and firm. Take the vegetables out and in the same pan heat the cooked beef until they are warmed thoroughly. Take out the beef and fry the cubed Spam in the pan until crispy.
Spray a large deep frying pan or wok with Pam. Heat pan on medium heat. Beat the two eggs and pour into the pan. Cook, stirring and are lightly scramble until the eggs look cooked but not too dry. Add the cooked rice and cook for a few minutes. Use a spoon to break the rice apart. Then stir in the soy sauce. Pan fry the rice until warmed. Add the vegetables, beef, and Spam to the rice. With a spoon, mix the rice thoroughly with the added ingredients.
