Do you like gluten free clumpy, rather than flat, chocolate chip cookies? If so, check out Bob’s Red Mill gluten free chocolate chip cookie mix. Just add butter/margarine, one egg and two tablespoons of water.
When the batter is all mixed up, it will appear that it’s quite short on a fluid base, and you’ll wonder if two tablespoons of water is actually enough. The mix won’t even be pasty and moist looking. However, if you grab some of the mix and squeeze and compress it into a ball, about the size of a superball or a little larger, the batter will magically stick. You will have a well-formed ball. The directions instruct you to shape the mix into a ball one and a half inches in diameter.
However, if you try to shape this gluten free chocolate chip cookie mix into a flat cookie, it will not hold together, and that’s perfectly fine if you prefer clumpy chocolate chip cookies, rather than boring, flat ones.
Bob’s Red Mill gluten free chocolate chip cookies are tasty and you’d never know they were gluten free. Serve these cookies up at a get-together and don’t tell anybody they are gluten free, and nobody will know the difference.
Depending on how you manipulate the cooking time and temperature, you can have cookies with a crispy exterior, or cookies with a softer, chewy exterior.
For chocoholics such as myself, you may find that there aren’t as many chips in the mix as you’d like, so I recommend supplementing the mix with some gluten free chocolate chips.
