Zucchini is one of summers bounty that is so good for you. I bet you never ever thought of eating it raw, I know I hadn’t until I got a brilliant idea. Why not slice it in matchsticks and put it on your favorite foods. I had never tasted it raw so this was a first for me.
At only 25 calories in an entire medium sized zucchini, this sounded too good to be true. I had been anxious to try my new mandolin, here was my chance. Nervous if I would like it and more nervous about if my kids would eat it, I waited to taste it until it was sliced into matchsticks.
Let me just tell you, It’s fabulous. It doesn’t have much flavor, but it tastes fresh and cut into matchsticks the texture is wonderful. Now that I came up with an effective way to eat zucchini fresh, the real test was on my kids. I had to figure out something they love that I could cook for them to try this out.
I decided on making whole wheat soft tacos, and placing it out as an ingredient in place of lettuce. To my delight, they loved it but not half as much as I did knowing I was feeding my kids real good for you food.

1 package of whole wheat tortillas ( or as many as you need for your family)
1 lb. Lean Ground beef or ground turkey. For the vegetarians out there use fat free re-fried beans.
Shredded cheese of your choice
1 small zucchini
Light Sour cream(optional)
Taco sauce or salsa of your choice.
Set your meat to brown on the stove.
Set your tortillas to warm in the oven.
Shred the cheese (skip if you bought it already shredded)
Use your mandolin if you have one to create fast matchsticks out of your zucchini.
Gather the rest of your preferred ingredients and set the table.
