Cinnamon Chocolate Bread Pudding Souffle
3 tablespoons cocoa powder (unsweetened)
¼ cup sugar
½ teaspoon of cinnamon (ground)
1 1/3rd cup of fat free milk
1 ½ cups dry French bread cubes (they should be approx. ½ inch in size)
½ teaspoon of vanilla
2 tablespoons of all purpose flour
3 egg whites
3 egg yolks
3 tablespoons of white sugar
Break out your souffle dishes. Either a 5 oz. size, or if you don’t have those, just go with a custard type of cup. Place them in a 15x10x1 baking pan, and place it all to the side.
Next, stir cocoa powder, sugar, and cinnamon in a small bowl. Then add your milk and vanilla. Use a whisk to stir this combination until it’s well blended together. At this point you can stir in the bread cubes.
Begin to cook this combination while mixing well . The goal is for it to become bubbly and thick. Once you’ve reached that point, remove the pan from the heat.
Next, grab a medium sized bowl and beat the egg yolks on high speed approximately 4 minutes or until their thick and a pale lemon type of yellow. Slowly stir in the thick milk fluid to the egg mix, add the bread mixture and set to the side.
Your next step is to beat the egg whites until they form tips or curls at the top. Slowly add the 3 tablespoons of sugar, until the egg whites stand straight and become stiff . At this point you’ll fold the bread mixture into the egg whites you’ve just beaten.
Evenly divide the finished pudding mix into your souffle or custard cups and bake at 350 degrees for 20 minutes. You’ll know when it’s done by inserting a knife in the center. If it comes back out clean, it’s done.
Cinnamon and chocolate create a great flavor combination for the holidays, and the smooth texture of the souffle is another plus.
