I like to qualify my recipes by how much time it takes to prepare them. With these two breads, you need a couple of hours, including baking time. This first recipe is adapted from a childhood friend’s mother’s recipe.
Blanche’s Pumpkin Bread
3 ½ cups flour
1 ½ t salt
1 t cinnamon
1 t nutmeg
2 t soda
3 cups sugar
1 cup oil
4 eggs (I have great results with pasteurized egg products)
1 can pumpkin (15-16 oz.)
2/3 cups water
Preheat oven to 350. Grease and flour two loaf pans. Stir together flour, salt, spices, and soda. Set aside. Stir sugar and oil together in a large bowl. Thoroughly stir the eggs and pumpkin into the sugar mixture. Alternate adding the water and the flour mixture to the pumpkin mix a little at a time, stirring well between each addition. Pour into two loaf pans. Each will be a little over half full. Bake for about 1 hour. Check center with a toothpick. It should come out pretty clean. As an alternative, you can make 4 mini-loaves, but they will need a little less cooking time. Blanche used to bake several loaves at a time in coffee cans, then put the lids on and freeze them for later use.
This next recipe is named after my husband who is not a fan of strong banana flavor and doesn’t like nuts baked into anything. I combined what I liked from several recipes and subtracted some of the banana and all of the nuts to get one the whole family liked. It’s nice to make as an alternate from everything so full of Christmas and pumpkin spices.
Warren’s Not-So-Banana Bread
1 cup sugar
3 T softened butter or margarine
1 egg or ¼ cup pasteurized egg product
¾ cup milk
2-3 mashed overripe bananas, depending on size
3 cups flour
3 ½ t baking powder
1 t salt
Preheat oven to 350. Grease two loaf pans. Thoroughly mix sugar, butter and egg in large bowl. Stir in milk and mashed bananas. In a different bowl, mix together flour, salt, and baking powder. Pour and stir ½ to 1 cup of the flour mixture at a time into the sugar mixture. Once everything has been mixed in, pour into greased loaf pans and bake for 60-70 minutes. You should expect to see a crack in the top and a toothpick inserted in the middle will come out pretty clean.
