When family and friends are visiting for the holidays, it can be an impossible task creating one meal everyone will like. Instead of trying to make one meal consider making a brunch type meal. A Holiday Brunch will allow you to mix and match food items, while pleasing everyone.

When you begin planning a Holiday Brunch or any brunch, think about breakfast foods. Begin with a cinnamon rolls, caramel rolls or muffins. Rolls can be filling and a treat for some. Next, think about some breakfast meat options such as bacon, sausage links or patties, Canadian bacon or breakfast ham. It’s hard to think about breakfast without some eggs but fried eggs will be an issue. Think about scrambled eggs or an egg quiche. Another fun breakfast type dish is breakfast pizza. When making a brunch menu, don’t overlook pancakes or waffles with syrup or fruit with whipped topping.
If your brunch is a little later in the morning, where it might end at lunch time or later, it’s a good idea to add some lunch type dishes into your brunch. Ham is a versatile meat for Thanksgiving, Christmas or any holiday bunch. You may want to add Cheesy Ham Hash Browns to your Holiday Bunch.
If you have really young children attending brunch, they may prefer cereal over anything else. Keep that in mind while shopping for your brunch.
Beverages are key when creating a brunch menu. When people are enjoying some good beverages, they won’t eat as much. Keep the coffee pot full. While coffee is good for some, don’t over look tea and water. Also, a few different flavors of juice is sure to keep everyone happy.
You will need:
2 – 12 inch Pizza Crusts
12 Eggs (beaten)
3/4 cup Milk
1 lbs ground Sausage (cooked)
Bacon (fried and chopped to bits)
Suggested toppings are onion and green pepper, minced. You can do whatever toppings you wish, such as mushrooms. Also, hash browns do work in this recipe. About 2 cups of hash browns is recommended.
4 cups cheese (cheddar or American suggested)
Salt and pepper
Step One: Preheat the oven to 400 degrees.
Step Two: Place the pizza crusts in the pans. Bake for 5 – 7 minutes. Do not allow them to brown or finish cooking.
Step Three: Spread the beaten eggs evenly on the prepared pizza crusts.
Step Four: Add desired toppings evenly.
Step Five: Cover with cheese, about 2 cups on each pizza.
Step Six: Bake for 30 minutes or until the cheese is melted and golden brown. Then serve.
Cheesy Ham Hash Browns
You will need:
1 bag shredded hash brown potatoes
8 oz sour cream
1 can cream of chicken soup
1 stick butter or margarine (melted)
1/2 of a small onion
Step One: Preheat oven to 350 degrees
Step Two: In a large bowl, mix the hash browns, sour cream and soup together.
Step Three: Add cheese, onion and butter (or margarine) to mixture
Step Four: Spread mixture in a 9X13 pan
Step Five: Bake for 45 minutes or until crisp on top.
You will need:
2 eggs, slightly beaten
1 cup buttermilk
1 T baking powder
1 cup whole wheat flour
1 cup flour
3 T Splenda
1 cup frozen or fresh blueberries
grated rind of 1 lemon
3 T Canola oil
1/4 tsp salt
Step One: Preheat oven to 400F.
Step Two: In one bowl, mix eggs, buttermilk, oil, and rind. In another bowl, mix flours, baking powder, salt and Splenda.
Step Three: Toss blueberries in flour mixture to coat well. Pour egg/milk mixture over flour mixture, mixing only enough to combine. DO NOT OVERMIX!
Step Four: Spoon into 12 paper lined muffin cups.
Step Five: Bake 20-25 min. Do the toothpick test to see if done.
