Last night, I spent a few hours baking loaves and loaves of homemade pumpkin bread for my coworkers, my husband’s employees and our families. I didn’t have a bowl big enough to hold all the ingredients!
Anyway, I’ve gotten nothing but good reviews, so I figured I’d share my recipe. It’s pretty simple, and it’s DELICIOUS. It’ll be a hit at your Thanksgiving or Christmas dinner (if you can keep yourself or your hubby… ahem …from eating it before then)!
This makes 3 loaves.
Here’s what you need:
1 large can pumpkin puree
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
Preheat oven to 350.
Grease & flour three loaf pans.
In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended.
In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger.
Stir the dry ingredients into the pumpkin mixture until jblended. If you see some chunks of unblended flour, use a hand mixer on low for just a minute or two. Don’t over-mix.
Pour into the prepared pans.
Bake for about an hour in the preheated oven. Stick a butter knife or toothpick in the center of your bread. When the knife/toothpick comes out clean, it’s done.
