Step 1: Bake Away: Choose they type of cake you want to use and bake as directed on the box. I also recommend lining the bottom of the pan with wax paper to prevent the cake from sticking!
Step 2: Cool Cake: This step is EXTREMELY important. Put the cake in the freezer and let sit for at least 15 minutes; the colder the cake the better. Cooling or freezing the cake will give you a sturdier platform and prevent tearing.
Step 3: Crumb Coating: A crumb coat is just a thin layer of icing that seals in all of those ugly crumbs that tend to show on the finished product. Once you have covered the cake in a thin layer of icing, put it back in the freezer for an additional 15 minutes.
Step 4: Icing the cake: Now that you have your crumb coat finished its time to icing the cake. Go about as you normally would and get it as smooth as possible! Getting the cake smooth should be easy if the crumb coat was done properly and the cake is cooled. It also helps tremendously if you have a flat spatula used for icing cakes. After the cake is iced and some-what smooth, let the cake sit and crust over, this generally takes 7-15 minutes; for faster results place in freezer!
Step 5: The finishing touch: The smoothing process can be done is two ways, with the paper towel method or the spatula method. To use paper towels you will need a no design brand (Viva). Once the cake has a nice crust place the paper towel over the cake and smooth lightly with your hand. The wrinkles should start disappearing like magic! The alternative is to use the icing spatula and warm water. After the cake has a crust it is easier to smooth out the wrinkles manually just as if you were icing the cake. Dipping the spatula in warm/hot water helps it glide easier over the icing and is highly recommended!
