In the spirit of living and eating well, my girl friends and I have embraced a new and healthy excuse to get together. We’ve invented what we refer to as the Salad Bar Party! A Salad Bar Party, obviously, features salads, salads and well, more salads. Each party guest as well as the hostess, presents a fresh and tasty salad to share and enjoy.
For our monthly Salad Bar Parties, my friends and I set up a buffet table to display our delicious salads. We also include crunchy, low fat breadsticks as well as low cal dessert salads. And, we usually partake in a light white wine or a calorie free fruity flavored water. Here’s one of our recent Salad Bar Party menus:
Combine 4 ounces of cream cheese with 1 cup of sour cream and 1 cup of mayo. Stir in an envelope of garlic salad dressing powder mix. Then separate a large head of cauliflower and add it to the mixture. Now, toss in 1 cup of sliced radishes, Â½ cup of chopped green onion and fresh mushroom wedges. Blend your Cauliflower salad gently and then refrigerate overnight.
Chicken Mediterranean Salad
For a zesty chicken Mediterranean salad, in a large bowl combine 1 can of black olives drained, and 1 can of artichoke hearts drained. Next, add in 10 to 12 whole cherry tomatoes along with a cup or so of fresh cut mushrooms. Toss in 2 sliced purple onions as well as green or yellow pepper strips. Set aside.
For a zippy salad dressing, combine Â¾ of a cup of vegetable oil with Â¼ of a cup of olive oil. Pour in Â½ of a cup of red wine vinegar and then sprinkle in 1 teaspoon of salt, 1 to 2 cloves of garlic, 1 teaspoon of oregano and Â¼ of a teaspoon of pepper. Shake the dressing over the salad ingredients and then top with some savory strips of grilled chicken.
We always like to include a pasta salad at our get togethers. We keep it real simple by purchasing a boxed pasta salad kit and then adding a little flair with pepperoni slices and cubes of cheddar or Swiss cheese. You can also add in some fresh chopped veggies, cooked and cooled tortellini and some grated parmesan cheese.
For dessert, a bountiful fruit salad works great, chock full of strawberries, blueberries, watermelon, cantaloupe and more. Sometimes I will also make a fluffy fruit salad using an 8 ounce brick of softened cream cheese combined with 1 Â½ cups of sugar and then beaten with a hand mixer. Add in a 16 ounce can of drained fruit cocktail and one 15 ounce can of drained pineapple chunks. Fold in an 8 ounce tub of whipped topping. Refrigerate for a few hours and then serve.
