Whether you are smoking fish, ribs, or even corn on the cob, all you need is two aluminum roasting pans, a grill rack, and hardwood chips. (See below for tips on chips.)
Lay one of the pans flat and place an even layer of soaked chips in it. Place your grill rack over the chips and put the second pan on top, like a lid. Put the whole thing on the grill over the heat and leave it there until you can smell the smoke. Put the food you want to smoke on the rack and put the lid back on. Smoke the food as directed by your recipe.
So what kind of hardwood chips should you use? It’s up to you and your individual tastes. Different chips provide different flavors for the food, kind of like spices. If you are new to smoking and want something basic, use oak chips. They pair well with any meat or fish. If you want to try something different, go with wild black cherry chips. They add a sweet, slightly fruity taste to the food, and would be great with a ham, or anything you would put a sweet glaze on. If you want a really strong smoky flavor that’s reminiscent of bacon, then you want hickory. And if you want a mild flavor, for veggies and such, try hard maple. It imparts a sweet mellow flavor. Try them all with different foods and see which combinations get your taste buds singing.
