This Thanksgiving dessert is sure way to spice up your cranberry consumption this year without having to use a cranberry sauce. It’s simple to make and tasty too! And who doesn’t love a cookie?
* 1 cup butter flavored shortening
* 1 cup sugar
* 1 cup brown sugar, packed
* 2 eggs
* 2 tsp vanilla
* 2 1/2 cup old fashioned oats
* 2 cups flour
* 1 tsp baking soda
* 1 tsp cinnamon
* 1/2 tsp salt
* 1/2 tsp baking powder
* 1 1/3 cup dried cranberries
Preheat oven to 350 degrees. This recipe makes 1 13×9 inch pan.
In a mixing bowl, cream shortening and sugars. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
Combine oats, flour, baking soda, cinnamon, salt, and baking powder; gradually add to the creamed mixture. Stir in the cranberries.
Drop by tablespoonfuls 2 inches apart onto lightly greased baking sheets. Bake at 350 degrees for 12- 14 minutes or until lightly browned. Remove to wire racks to cool.
