Everyone loves to have their cake and eat it too, but after a while chocolate and vanilla get kind of boring. Here is a way to spice up your favorite cake. This yummy treat is perfect for spring or summer. This is an easy way to dress up your favorite box cake so that nobody will know that you didn’t make it from scratch.
Things You’ll Need:
* 1 8oz package cream cheese
* 1/2 cup butter (1 stick)
* 3 cups sifted powdered sugar
* 3 tbs thawed pink lemonade concentrate
* 1 tsp lemon zest
* 1 large mixing bowl
* electric mixer
* Cheese grater
Place the cream cheese and butter in a large mixing bowl. Blend with an electric mixer on low until light and fluffy.
Zest your lemon for your 1 tsp. Using a cheese grater on the smallest sized grate rub the lemon rind on it just until it gets to the white part. Don’t go any further! This is your rind.
Stop the mixer and add sugar, pink lemonade concentrate, and lemon zest. Blend with the mixer on low speed until sugar is Incorporated, this takes about one minute.
Increase speed to medium and beat until light and fluffy the whole way through.

*Top this delightful treat with fresh strawberries for an extra special twist.
*If you have left over zest, use them as a garnish to enhance the look of your cake. Nobody will ever know it came from a box!
*When grating your lemon peel, it is best to grate the whole lemon and use the juice for something before it goes bad.
*If you are going to use fresh strawberries as a topping, Squeeze your lemon juice onto your strawberries so that they do not wilt or start to turn brown.
