Now is the time to start using up those vegetable that you grew this summer. Zucchini bread is a simple recipe and will use some of those fresh vegetables before the frost.
* 3 eggs
* 1 cup vegetable oil
* 2 cups white sugar
* 2 cups grated zucchini with the skin on
* 2 tsp vanilla extract
* 3 cups all-purpose flour
* 3 tsp ground cinnamon
* 1 tsp baking soda
* 1/4 tsp baking powder
* 1 tsp salt
* 1/2 cup chopped walnuts (optional)
This recipe makes two 8×4 loaves. Preheat oven to 325 degrees.
Grease and flour two 8×4 inch loaf pans.
I a large mixing bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, baking soda, baking powder, salt and nuts if you choose to use them. This may look soupy which is normal. Divide the batter into the prepared pans.
Bake at 325 degrees for 60-70 minutes. Best served warm with butter.
