Here’s another way to get incorporate fruit into your diet. Great as a snack or as something extra on a buffet table, adults and kids alike will find fruit salsa is something to look forward to.
Things You Need:
1 cup raspberries (fresh or frozen will do)
1 large apple (Granny Smith or Red Delicious both work great)
1 cup blueberries (fresh or frozen)
1 fifteen ounce can of slices peaches.
1 teaspoon lime zest
2 tablespoons lime juice
2 tablespoons honey
Peel, slice, and quarter the two kiwi. Also peel, core, and dice the large apple. Place ingredients in a large mixing bowl.
Add in the raspberries and blueberries. If using frozen berries, allow them to thaw and drain them slightly before adding them to the apple and kiwi.
Drain the peaches, and add to the other fruit.
Whisk the lime juice, honey, and lime zest until blended, then pour over the fruit. Toss gently until all the pieces of fruit are coated.
Tips and Warnings
While this fruit salsa recipe can be served immediately after combining the ingredients, it’s even better if yhou allow it to chill for at least thirty minutes. Try serving with shortbread cookies or as a topping on ice cream, slices of pound cake, or any other sweetbread you can think of.
