To begin, you will need to gather the proper ingredients in order to bake this dessert. First, you will need a box of the lemon bar mix from any local grocery store, a cupcake pan preferably a mini cupcake pan but a larger one will do as well, and mini cupcake liners.
First, follow the directions of the lemon bar mix which is located on the back of the box. However, since we are not going to create bars, the preparation is going to be altered. Once you have mixed all of the necessary ingredients that were found in the box, you can begin to prepare you cupcake liners in the cupcake pans. Next, you will gather the crust of the lemon bar mix and scoop out just enough so that it fills some of the cupcake liners. Press the crust down with your finger so that it makes for a nice foundation.
Preheat your oven to the indicated time on the back of the lemon bar box, and then begin to pour your lemon filling on top of each of the crusts. Begin pouring a little at a time so that you make sure that each cupcake will have some lemon filling, then you can always go back and add some more if you have extra, or save it for a new batch of cupcakes. Next, place your cupcakes in the oven for about ten minutes, you don’t need to worry about the amount of time indicated on the box because those times are only specific to if you are making lemon bars. Since we have altered the amount of ingredients that are in each cupcake, it won’t take that much time to cook. Ten minutes should be a good time, and when the timer reads that there are a few minutes left before your cupcakes are finished, open the oven and scatter some shredded coconut around the top of each cupcake. The coconut will toast in the oven and make for a delicious addition to this dessert. When the cupcakes have come out of the oven and have cooled for some time, you can also sprinkle some powdered sugar across the top if you wish to add a little more sweet tastes.
