Tortilla shells are a staple in our house. My fiance has one with every meal, dipping it into his food like it was bread and butter. When we actually do have burritos I like to venture beyond the classic bean and cheese variety, and have found quite a few snacks that involve tortillas that are quite tasty.
Try eating a tortilla simply filled with just cream cheese and cheddar cheese. Simply delicious. To further spice it up, toss in fresh spinach, chopped onion, or jalapeno slices to make a delicious meal that is awesome.
Fill a tortilla with cheese, cream cheese (or cottage cheese for the health conscious), and fresh mushrooms. Make about a dozen and place them in a baking pan and pour cream of mushroom soup on top and sprinkle shredded cheese on top of that. Bake at 350 degrees for about 15 minutes and you’ll pull delicious tortillas out of the oven in no time.
You can also fill tortillas with cream cheese, cottage cheese, and cheddar cheese and mild green chilies. Add in some fresh spinach and layer a baking pan once again with a dozen or so tortillas. Line fresh spinach on top of the tortillas and mix a cup of cooked rice, cheese, cream cheese, and salsa and spread it on top of the tortillas. bake once again at 350 degrees for about 15 minutes and you have an awesome dinner with tortillas in no time.
Lightly fry flour tortillas torn into strips in a frying pan with butter or olive oil until crispy. While still hot sprinkle the strips liberally with Cinnamon and sugar for a tasty dessert treat the whole family will love.
Note: all these ideas contain no meat and are designed to be quick and easy when using flour tortillas. You can use whatever cheeses you like, and any cream soups, I just like cream of mushroom the best. Any veggie can work to stuff tortillas, and you can make quick and easy casseroles in no time just via experimentation. Fun and easy (if I can do it, anyone can), and a great way to get out of a “burrito rut” when you have a huge plethora of tortilla shells in your house.
