Any kid that likes to dip things in ranch or sour cream has the ability to love hummus and eat it often, but unfortunately most people mess up this healthy snack and make it un-kid friendly by adding things that make it lumpy, like sundried tomatoes, or artichokes, or too spicy. Use this very simple recipe to introduce your child to hummus. When they are older you and already love hummus is when it will be okay to add a little more flavor or texture to hummus.
1 can garbanzo beans (also called chick peas)
1 tablespoon minced garlic
2 teaspoons lemon juice
1 teaspoon cumin
½ teaspoon pepper
½ teaspoon salt
1 tablespoon extra virgin olive oil (evoo)
Drain the garbanzo beans but keep the liquid. Put half the liquid back into the beans and puree in food processor, keep adding liquid until is smooth and creamy but not watery.
Add the rest of the ingredients and puree again until smooth
Serve with veggies or chips
Use on sandwiches instead of mayonnaise
Add to nachos
Mix equal parts hummus and ranch and use for fries, chicken tenders any other time your child uses ranch
Cut a pita into triangles and let your child spread the hummus on
Offer as an accompaniment for tacos or taco salad
