I had some broccoli that I wanted to add to a simple recipe and I came up with an easy chicken and rice recipe using ground chicken. This is what I made, but of course, it can easily be adjusted to accommodate your taste. You may find you want more or less seasoning.

1 lb ground chicken
1 bunch of broccoli
1 cup brown rice
2 cups organic low sodium chicken broth
1/2 purple onion
4 cloves garlic
2 Green Fresno peppers
Himalayan pink salt

Using my trusty rice cooker, I used one cup of brown rice and two cups of chicken broth. I also added some garlic powder, onion powder and a little coriander. While the rice was cooking, I sautéed the onion and garlic in olive oil. I then added a couple of green Fresno peppers before adding the ground chicken.
I seasoned the chicken with a little pepper, coriander, garlic powder, cayenne, and Himalayan pink salt. While the chicken was cooking, I cut up the broccoli. My rice cooker has a steamer added to it, so I put the broccoli in the steamer for 10 minutes.
Once everything was cooked, I added a little olive oil to the bottom of a large serving bowl, mixed the broccoli with it, and added some Himalayan pink salt. I then put in the rice and mixed it up with the broccoli. The last step was to add the ground chicken and mix it all together. I tasted it all together and decided I didn’t need anymore seasoning.
