Rice is a real multi-tasking food. Rice is high in vitamin B, fiber, protein and good carbs. Rice is low-fat and has zero cholesterol. Here are main dish, or entree recipes featuring rice in vegetarian meals and meals with meat. One pot, stove top recipes make for easy, quick preparation and clean up.
Savory Vegetarian Herb Rice: My family loves rice and they adore this recipe. This rice dish is perfect for special diets and weight loss meal options.
Boil two cups dry rice with
-one 24 ounce container vegetable broth (or water)
-one tablespoon Bragg’s liquid amino (or soy sauce)
-one teaspoon rubbed sage
-one tablespoon minced dried onion (or chopped fresh onion or leeks)
-half teaspoon of garlic powder
-half teaspoon celery seed
-coarse ground black pepper (to taste)
-one stick butter or margarine. If you choose margarine, choose the olive oil varieties, like Olivo or Smart Blend. You can also use one half cup of olive oil in place of butter.
-one bunch cleaned broccoli cut into small flowerets or one package frozen broccoli (add entire contents of package; don’t rinse or drain).
-chopped fresh mushrooms (optional)
Cook until rice and broccoli are tender.
One Stove Top Chicken Rice Casserole: Using this recipe is a great way to clean out all the leftover, half-eaten, half-used vegetable portions in your refrigerator.
-one large can chicken or vegetable broth (or water)
-one 12 ounce can cooked chicken, or leftover cooked chicken breast, cooked chicken cut from bone or rotisserie chicken.
-one half teaspoon sage
-pepper to taste
-two cups dry rice-Jasmine is our preference. Use more rice for a casserole consistency, less for stew and still less for soup.
-any combination leftover mushrooms, onion pieces, carrots, radishes, celery, leeks, broccoli, cauliflower, summer squash, zucchini, green peppers, colored peppers (use one package frozen vegetables: oriental mix, California Blend, broccoli, green beans or peas and carrots if fresh aren’t available).
-one 10 ounce can cream soup (rinse can and add water to mixture)
