Health conscious people like myself are trying desperately to cut back on the amount of red meat they consume. That can be difficult when one loves traditional dishes like chili. However, it need not be a problem at all.
McCormick, which is the name cooks trust when it comes to gravies, sauces, seasoning mixes and spices comes to the rescue with their White Chicken Chili Seasoning Mix. It is a great alternative to the old style chili.
While it may sound strange to substitute chicken for ground beef in chili, in reality it turns out to be quite a treat for the taste buds. Best of all, it still maintains that need for comfort food on a cool fall or chilly winter night.
McCormick’s White Chicken Chili Seasoning Mix comes in a 1.25 oz packet which represents 35 grams. It contains 4 servings with each serving being 30 calories. Of that amount; however, only 5 calories are fat-related.
This mix contains no cholesterol or fat and only 5 grams of carbohydrate and 2 gram of sugar. Unfortunately, it has no other nutritional value whatsoever.
Ingredients include chicken broth, chicken fat, chili peppers, enriched wheat flour, garlic, miscellaneous spices, modified cornstarch, onion, red pepper, salt, soybean, soy sauce, sugar and yeast extract. It also contains citric acid and natural flavors. Enriched flour contains folic acid, mononitrate, niacin, reduced iron, riboflavin and thiamin.
Fixing McCormick’s White Chicken Chili Seasoning Mix is easy. However, you will need additional ingredients. These include 1 lb. of chicken breasts cut into small cubes about .5″ in size; 1 cup of water, 1 can of white beans, and 1 tbsp. of oil.
Begin by browning the chosen chicken in oil heated in a skillet over medium-high heat. Let it become a light golden brown in color. That will take about 5 minutes.
Next, mix in the seasoning packet, stirring to work completely through the meat. Then add the beans and water. Stir everything together thoroughly.
Bring the ingredients to a mild boil. Once achieved, reduce heat to a simmer and cover the skillet. Let the chili cook for about 10 to 15 minutes. Don’t forget to stir every few minutes to prevent the dish from sticking to the skillet. When done, remove the chili from the heat and serve alone, with avacado, cheese, cilantro or sour cream.
