10 to 12 White or Red Potatoes (Ms. Nellie likes potatoes from Idaho)
1 Stick sweet cream butter
¾ cup Carnation milk
½ teaspoon freshly minced garlic
Add ½ teaspoon salt (use salt to satisfy your salt palate but keep your blood pressure in mind)
¾ teaspoon white pepper (Ms Nellie don’t like no dark specs in her white potatoes)
Boil potatoes until done (don’t overcook them, chile). Mash potatoes with fork and then whip them with a blender
Add butter to hot potatoes while blending
Add ½ teaspoon salt
3/4 teaspoon white pepper
½ teaspoon minced garlic
Pour milk into bowl while blending potatoes
Add milk a little at a time until you get a consistency to your liking (Ms. Nellie likes her smooth and creamy). The amount of milk you use will depend on the texture of the potatoes, serve warm. To serve them pretty put them in a nice bowl and sprinkle with a little paprika and garnish with fresh parley.
Leftover Potato Pancakes
Leftover potatoes make great potato pancakes
Add egg, chopped onion and parley
Sprinkle with paprika
Fry in pan with ¼ cup olive oil or shortening or
Broil in oven 3 minutes on each side.
Delicious with pork chops, lamb or chicken. If your cholesterol is under control with top with a little sour cream.
