Muffins are good items for lunch boxes, picnics, and munchies cravings. When spices are added, the flavor is more appetizing, and the house smells like holiday baking.
1 ½ cups all-purpose flour
½ cup sugar or sugar substitute
2 tsp baking powder
½ tsp salt
½ tsp cinnamon
½ tsp nutmeg
½ tsp allspice
½ cup milk
½ cup canned pumpkin
¼ cup butter or margarine, melted
½ cup raisins
¼ cup finely chopped walnuts
Heat oven to 400 F. Take the 12-medium-muffin pan off the shelf and grease the bottom of each “dish.”
Crack the eggshell. Put the yolk and egg white in a mixing bowl; discard the shell. Add the remaining ingredients, including raisins and/or walnuts, if desired. Using a mixing spoon, mix the ingredients just until the flour is moistened. The batter should be lumpy.
Fill the muffin cups 2/3 full. Bake 18 – 20 minutes. Immediately remove from pan.
