If you want to prepare a special dinner, yet still want it to be healthy, this has been my favorite dinner recipe for years. It looks beautiful, tastes delicious, but it fits into a healthy diet!
1/2 teaspoon garlic powder
3 tablespoons dried parsley or fresh chopped parsley
1 teaspoon dried basil
1/2 cup low-fat ricotta cheese
1/2 cup non-fat or low-fat cottage cheese
1/2 cup mozzarella cheese
2 tablespoons + 1/2 cup freshly grated Parmesan cheese
2 egg whites
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon rosemary
2 tablespoons olive oil
4 boneless skinless chicken breasts
Preheat oven to 350 degrees. Pound chicken breasts until approximately 1/4″ thick. (For best results, pound between 2 pieces of plastic wrap). In a medium sized bowl, mix garlic powder, parsley, basil, ricotta and cottage cheese, 1/2 cup Parmesan cheese, egg whites and salt. Place a large spoonful down the middle of each chicken breast. Lightly grease a casserole dish with the olive oil. Place chicken with mixture into the dish and slowly roll each chicken breast together. Secure with a toothpick. Drizzle a small amount of olive oil on top, then sprinkle with paprika, rosemary and remaining Parmesan cheese. Bake in the oven for 35 – 45 minutes or until lightly browned on top and chicken is cooked through. Be careful not to over cook. Excellent served with steamed fresh asparagus!
