With Oktoberfest just around the corner and the nip of fall in the air, it is a perfect time to sit down to a nice hearty bowl of German soup served with a German salad, cheese and bread. Here are two German recipes that would be ideal for such an occasion.
German Beef and Tomato Soup
To make “German Beef and Tomato Soup” you will need to gather together the following ingredients;
• 8 cups cabbage, finely chopped
• ¼ tsp. allspice
• 28 oz. crushed tomatoes
• 1 bay leaf
• 1 tbsp. salt
• 3 tbsp. sugar
• 1 large diced onion
• 5 cups water
• 3 peppercorns
• 1 pounds ground beef
Start by taking a heavy stockpot and sautéing the onions and ground beef until both are browned. Then drain the fat from the stockpot and add to the pan the allspice, peppercorns, sugar, salt, tomatoes, bay leaf and water. Simmer the mixture for 45 minutes and then add the chopped cabbage to the stockpot. Let it simmer for 15 more minutes, then remove the peppercorns and bay leaf.
Serve the soup with a slice of robust pumpernickel bread, hunk of German Sauermilchkase cheese and a side salad of cabbage and pears.
German Pears and Cabbage Salad
To make “German Pears and Cabbage Salad” you will need to assemble the following ingredients;
• 2 ripe but firm Anjou pears
• 1 small head of shredded cabbage
• 2 tbsp. butter
• ½ tsp sugar
• Salt and pepper to taste
Begin by placing a medium sized non-stick sauté pan over low heat. Melt the 1 tablespoons of butter into the pan and then add the shredded cabbage. Toss the cabbage while it is in the pan until the shreds are well covered with the butter. Next cover the pan and allow the cabbage to simmer for 10 minutes. Once that is complete, remove the pan from the flame and set it aside on an empty burner or hot plate.
Quickly peel, halve and core the Anjou pears. Then slice the pears into the pan making sure that the pear slices are nice and thin. Take out a small skillet, add the 1 tablespoon of butter, sliced pears and sugar to the pan. Allow them to cook for 30 seconds or until the pears are tender.
Next, add the pears mixture into the cabbage mixture and season it with salt and pepper to taste. Plate the creation using a nice salad bowl and serve with the German Beef and Tomato soup previously mentioned above.
