Your eyes still laced with last night’s sleep, you begin washing up and moving into your daily routines. Maybe you have kids at home. Everyone is rushing around, brushing their hair, bathing or showering. Mother is giving the baby its bottle. You foam up with thick lather, preparing to shave with your sharpest razor. All signs of the weekend gone: hair neatly combed, scruff shaved and aftershave applied. Mother is busy helping the other kids get ready, so you head off to the kitchen.
You feel superior in here. No longer is this woman’s world. Men have been cooking for centuries. Today you have the idea stuck in your head to make everyone some breakfast. Of course the kids will have their usual: cinnamon oatmeal. However, for Mom and Dad something a bit more flamboyant is in order. Dad will create his famous omelet. With full knowledge that you forgot to get groceries like the wife had asked, you scan the refrigerator. Down to one egg. You’ll greet this challenge with the same cleverness you greeted your ad campaign. Remember that ad campaign won you the bosses favor. So, here goes nothing. You’re gonna love this one.
1 cup grated cheese
½ cup milk or milk substitute
1 small can green chilies
1 large tomato
½ cup onion
2 strips bacon chopped
2 tablespoons butter
1 large skillet
Open up the can of chilies keeping the juice, do not drain. Chop your tomato and onion. Fry up those bacon pieces in your large skillet. Remove from heat when about 2/3 the way to being done, slightly chewy all most crisp. Use a mixer or beat by hand the milk and egg. Keep beating until slightly thick. Add the butter to the skillet, using warm heat to melt. You can mix the chilies and onion to the egg mix or cook. I prefer to cook these a bit. About 1 – 2 minutes. Then I add my bacon to the onion and chilies cook for about 1 minute. Remix the egg and milk then pour this mixture in. Sprinkle on tomato and cheese cover with a lid. You might flip or I just hit the mix with my spatula. I mix it all up and cook until the egg has cooked and cheese is melted. Since this is my one egg recipe. I will suggest pepper jack cheese. We love the spices. Once you have cooked this up remove from heat and serve with toast and jam.
For those who are counting calories you do not want to count this one as low cal. Enjoy.
