Good Morning Egg Cups
Country Home variation:
1/4 cup Diced cooked ham
2 Tbsp. Diced red bell pepper
2 Tbsp. Cheddar or Monterey Jack cheese
Mediterranean Morning variation:
1/4 cup Uncooked sausage
3-5 leaves Baby spinach
2 Tbsp Feta
Salt and pepper to taste.
Preheat oven to 350 F.
In a ramkin or other small oven safe dish, layer ingredients as follows: meat, egg, vegetable, cheese.
Bake 15 to 20 minutes, or until meat is cooked through and egg is firm.
