The convenience of prepackaged foods can lure any of us, even though we know that meals with all-natural ingredients are healthier choices. My husband and I are making an effort to cut back a little on processed foods. Recipes like this one-skillet sausage, peppers, onion, and potatoes dish make it easy.
You will need…
1 package Jennie-O Hot Italian Turkey Sausage
1 red pepper
1 green pepper
4-5 small red potatoes
Large skillet with lid
Pour a little olive oil into the bottom of a large skillet. Brown a package of sausage in the oil. I use Jennie-O’s hot Italian turkey sausage. Don’t worry…it’s not too hot, but it is more flavorful than Jennie-O’s sweet Italian sausage. I take off the sausage casings-I just have a ‘thing’ with those casings-it’s easier to do when the sausage is still partially frozen. Of course, you can also use pork sausage, if you prefer. As the sausage starts to brown, cut each link into about six smaller pieces.
While the sausage is cooking, cut up 4 or 5 small potatoes, 1 red pepper, 1 green pepper, and about ¼ of an onion. I use the little red potatoes and leave the skin on for the extra nutrients. After reading J.C. Grant’s article on Vitamin C Food Sources, I will be including some yellow pepper as well from now on.
Mix the sausage and vegetables together, cover with a lid, and cook on medium heat for about 40 minutes. Stir often.
Serve with hot Italian bread or rolls.
Hint: There are about 5 pieces of sausage in the Jennie-O package. After the sausage is cooked, I generally take out a piece and a half and freeze it. I can then throw it in when I make spaghetti sauce.
